- 1 tbsp coconut aminos (or gluten-free soy sauce)
- 1-2 drops Young Living Oregano essential oil
- 1-2 drops Young Living Basil essential oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp sea salt (or to taste)
- ½ tsp black pepper
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes (optional for a little heat)

**For the Topping / Glaze:**
- ¼ cup tomato paste
- 1 tbsp apple cider vinegar
- 1 tbsp coconut aminos (or tamari for gluten-free)
- 1 tsp honey (optional)
- ½ tsp garlic powder
- ½ tsp onion powder

Instructions:

1. **Preheat Oven:** Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it with olive oil.
   
2. **Prepare Vegetables:** Finely chop the onion and garlic. Grate the carrot and zucchini.
   
3. **Mix Ingredients:** In a large bowl, combine the ground beef, ground pork, chopped onion, grated carrot, grated zucchini, minced garlic, almond flour, coconut flour, almond milk, eggs, tomato paste, Dijon mustard, and coconut aminos. Mix thoroughly with your hands or a large spoon.

6. **Prepare Topping / Glaze:** In a small bowl, whisk together the tomato paste, apple cider vinegar, coconut aminos, garlic powder, and onion powder until smooth. Spread this glaze evenly over the top of the meatloaf.

7. **Bake:** Place the meatloaf in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

8. **Rest & Serve:** Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This gives the juices time to redistribute, making for easier slicing and a juicier meal.

9. **Serve & Enjoy:** Slice the meatloaf and serve hot. Pair with roasted vegetables, mashed cauliflower, or a simple green salad for a complete Paleo-friendly meal.
